What’s better than chocolate chip cookies!? DOUBLE chocolate chip cookies! And even better than that? Vegan and gluten-free double chocolate chip cookies!!

I recently had a strong craving for brownies or chocolate chip cookies and decided to look at pictures online. Anyone else love to tease yourself with pictures of the foods you’re craving!? Amidst scrolling and drooling, I discovered “brownie cookies,” where boxed brownie mix is used to make cookies. As someone who loves brownies and cookies, I knew I had to make some. Instead of running to the store for an overpriced boxed mix made with crazy ingredients, I decided to create my own recipe! The goal was to make more wholesome cookies without sacrificing any rich, decadent deliciousness. After some experimentation, I’m so excited to share the best double chocolate chip cookies with you!

Traditional brownies and cookies typically call for butter or oil, milk, eggs, and a great deal of sugar. Rather than simply replacing these ingredients with vegan alternatives, I wanted to make these brownie cookies healthy. When playing around in the kitchen, I knew I wanted these cookies to be:

Gluten free

Oil-free

Low in sugar

Moist

Suuuuper chocolatey

Healthier than most cookies

What Makes These Double Chocolate Chip Cookies Healthier?

These cookies include a healthy main ingredient: dates! Dates are high in fiber, antioxidants, potassium, magnesium, copper, manganese, and several other vitamins and minerals. Another healthy swap, these cookies use coconut flour instead of the usual wheat flour. Coconut flour is also high in fiber and nutrients like iron. Both rich in fiber and low on the glycemic index, dates and coconut flour may benefit digestion and help keep blood sugar levels regulated. This recipe also uses applesauce instead of oil for that perfect moist texture that you’d want in a double chocolate chip cookie.

My favorite part about these cookies is how “real” they taste. I don’t know about you, but I never liked overly sugary treats that I couldn’t take more than a bite of without feeling sick. When I told my dad that similar cookie recipes contain one to two cups of sugar, and this recipe only contains a half a cup, his jaw dropped. “Do cookies really usually contain that much sugar!?” Most do, but not these brownie cookies! These double chocolate chip cookies are so good without all that extra added sugar. The dates provide a nice natural sweetness, and these semi-sweet vegan chocolate chips are the perfect touch. These cookies also go great with a glass of your favorite plant-based milk!

  • 1/2 cup raw sugar
  • 2/3 cup cacao powder
  • 2 Tbsp unsweetened applesauce

  3. In a high speed blender, add hot water and soaked dates. Blend until date paste is formed.
  4. In a large bowl, mix sugar, coconut flour, cacao powder, and baking soda.
  5. Add date paste, applesauce, and vanilla extract to the dry ingredients and mix until well formed. Stir in vegan chocolate chips.
  6. Use a spoon to scoop cookie dough, roll into balls, and flatten into disks. Place flattened cookie dough onto trays. Bake for 15-18 minutes at 350°.

If you’re feeling resistance to taking 2.5 hours f If you’re feeling resistance to taking 2.5 hours for yourself tomorrow, I want you to know.. I get it 🫠

You have responsibilities. People depend on you. Your to-do list feels endless. Maybe you’re telling yourself you’ll slow down after this busy season, once you catch up, or when everyone else is taken care of.

But what if the very thing you’ve been telling yourself you don’t have time for is exactly what you need most?

Your nervous system was not designed to stay in survival mode forever.

When we’re constantly pushing, doing, giving, and staying “on,” eventually our bodies ask us to slow down one way or another.

What if this time, you chose to listen before burnout made that decision for you?

Imagine starting next week feeling grounded instead of depleted. Clear instead of overwhelmed. More connected to yourself, and able to show up more fully for the people and goals that matter most.

You don’t have to earn your rest.

You don’t have to wait until everything else is done.

You just have to be willing to lean into the belief that you’re worthy of receiving too.

If any part of you feels like you need this, we’d love to welcome you to our @vegansquadcoaching women’s virtual retreat tomorrow: Restore Within.

We’ll spend the afternoon moving through empowering mindset and identity work, gentle yoga, meditation, and crystal sound healing, all from the comfort of your own home, surrounded by women who are choosing themselves too.

If you’ve been craving a space to simply breathe, receive, and come home to yourself, we’d love to have you with us this Sunday.

I remember ordering those white bikini bottoms lik I remember ordering those white bikini bottoms like it was yesterday.

The second they arrived, I tried them on, stood in front of the mirror, and took a picture.

I was trying to make sense of the disconnect between how I wanted to feel, and who I was seeing.

I wanted to feel strong, confident, and comfortable in my own skin.

Instead, I felt disconnected from myself, had very little energy, and couldn’t understand how others were moving forward while I felt so stuck.

At some point I stopped ruminating on thoughts like, “what’s wrong with me?”

My focus shifted to what I could control: What’s one thing I can do today that my future self will thank me for?

So I kept showing up. Not perfectly or linearly.

I didn’t suddenly feel motivated to workout consistently.

But every week I got a little stronger, started to have more energy, and felt proud of myself for doing the things I said I’d do.

Every time I showed up for myself, especially on days I really didn’t feel like it, I created evidence that I could trust myself to keep growing and moving forward.

THAT’S what helped me tap into the confidence that I was worthy of feeling all along.

And it wasn’t because my body finally looked a certain way.

It was from becoming someone who kept choosing herself.

And it turns out that feeling is worth way more than the physique I thought I was chasing 🙏

If this feels like the reminder you needed today, let this be your turning point.

Not when you lose the weight, finally stay consistent, or reach your next goal.

Now ❤️

I’d love to have you join us for our @vegansquadcoaching women’s Virtual Retreat: Restore Within, this Sunday, where we’ll begin building the kind of confidence that comes from reconnecting with yourself, exactly as you are.

You’ll get to enjoy:

I really thought I would have to choose. Between I really thought I would have to choose.

Between being a foodie, being vegan, and building the physique I wanted.

I couldn’t have imagined that over 10 years later, I’d still get to try new restaurants, share meals with friends, enjoy dessert, compete as a vegan bikini athlete, and stay aligned with my values.

And, reminder that you don’t have to be vegan to make a difference.

Every time you opt for a plant-based option, it’s a chance to choose a little more kindness for animals and our planet, while still enjoying incredible food.

So whether you’re vegan, veg-curious, or just looking to try something new, I hope this reminds you that compassion doesn’t have to mean giving anything up. And actually, you’ll probably gain a whole lot more 🥰🌱

Have you ever wondered why it’s so hard to believe Have you ever wondered why it’s so hard to believe you’re enough, even after everything you’ve accomplished?

Subconsciously, many women have learned that self-worth is something we need to earn or prove by doing enough, taking care of everyone else, and overextending ourselves.

But the beautiful truth is that your worth is something inherent in you. You don’t lose it by slowing down, setting a boundary, or choosing you.

In fact, that’s what building self-love really is all about. It’s the process of creating a relationship with yourself that feels safe enough to trust and believe in.

If you’ve been craving a space to step out of the urgency, reconnect with yourself, and remember that you’ve been worthy all along, I’d love to have you join me for my free Women’s Self Love & Self Worth Group Hypnosis this Sunday.
