My number one favorite food growing up was mac and cheese. When I went vegan in 2016, that never changed. Adding buffalo chick’n elevated the dish to a whole new level. Ingredients Needed for this Vegan Mac and Cheese Recipe

The Say Grace Tenders of Grace used for protein in this vegan mac and cheese recipe
  • Say Grace Tenders for the chick’n. I think the texture of these tenders complements the creamy cheese sauce perfectly.
  • Buffalo Sauce. Choose your favorite, I highly recommend this one from Primal Kitchen. It’s so creamy with the perfect amount of spice.
  • Silken Tofu. The perfect base for the creamy sauce which adds a nice boost of protein.
  • Vegetable Broth or Better Than Bouillon. I use this Seasoned Vegetable Base in so many of my meals because it adds such great flavor.
  • Coconut Aminos. Another kitchen staple of mine, and my secret ingredient for all of my cheese sauce recipes and more. It adds the perfect umami flavor!
  • Lemon Juice. Just a small amount, for some nice tang.
  • Nutritional Yeast. For yet another sneaky boost of protein, and a delicious cheesy flavor.
  • Vegan Parmesan. While I mentioned no store-bought, processed cheeses were required for this vegan mac and cheese recipe, this vegan Parmesan from Panacheeza is a pantry staple of mine because it’s made with wholesome ingredients and tastes so similar to how I remember grated dairy parmesan tasting.
  • Spices. Onion powder, garlic powder, smoked paprika, black pepper, and salt. Simple and yummy.
  • Cornstarch. Just a small amount required to make the cheese sauce perfectly smooth and creamy.
  • Veggies. I like to top with some green onion. You can also add peas, spinach, or any other greens you like for micronutrients and even more protein.

How to Make this Vegan Buffalo Chicken Mac and Cheese Recipe

  1. Cook your vegan chicken tenders.
  2. Cook your chickpea rotini or desired pasta until al dente, then drain.
  3. Blend all of your sauce ingredients together. In a small pot, add cheese sauce plus cornstarch dissolved in cold water, and boil for one minute to thicken.
  4. In a non-stick pan, spray cooking oil and pan fry vegan chicken tenders until crispy. Add any desired spices. I like the Frank’s RedHot Seasoning for an extra kick. In a bowl, toss tenders with your favorite buffalo sauce.
  5. Plate and serve. Garnish with chopped green onion, if desired.

Ingredients
  

Vegan Buffalo Chicken
  • 1 oz. Say Grace Tenders code MYPLANTBASEDFRIEND for 10% off
  • 1 Tbsp Buffalo Sauce
  • pinch Frank's RedHot Seasoning Optional
Vegan Mac and Cheese
  • 55 grams chickpea rotini
  • 8 oz. veggie broth OR boiling water if using water, add 1 tsp better than bouillon
  • 125 grams silken tofu
  • 1.5 Tbsp coconut aminos
  • 1 Tbsp nutritional yeast
  • 1 Tbsp vegan parmesan
  • 1 tsp lemon juice
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/8 tsp salt
Cornstarch slurry
  • 2 tsp corn starch
  • 4 tsp cold water
Garnish
  • green onion chopped

Method
 

Make Vegan Chicken
  1. Add 1 Tbsp Better than Bouillon to a medium-size pot of water and boil.
  2. Add 1 servings (1 oz. dry) of Say Grace Tenders to pot and cook for 10 minutes.
  3. Strain cooked tenders and squeeze out as much liquid as possible. In a non-stick frying pan, spray cooking oil and pan fry tenders until they have a nice golden crisp. Add any desired spices (optional).
  4. Add tenders to a bowl and toss with 1 Tbsp of buffalo sauce until well coated.
Cook Pasta
  1. Boil a pot of water, and add in 1 serving of chickpea rigatoni. Cook for 9 minutes until al dente. Strain.
Make Vegan Cheese Sauce
  1. In a blender, add silken tofu, 8 oz. veggie broth OR boiling water with 1 tsp better than bouillon dissolved, coconut aminos, nutritional yeast, vegan parmesan, lemon juice, onion powder, garlic powder, and smoked paprika. Blend sauce mixture until smooth and combined. Add cheese sauce to a pot on high heat.
  2. In a small bowl, mix 2 tsp cornstarch with 4 tsp cold water. Mix until incorporated
  3. Add the cornstarch mixture to the pot of cheese sauce, and boil for one minute to thicken. Add black pepper and salt to taste. I added 1/4 tsp black pepper, and 1/8 tsp salt.
  4. Add cooked pasta to cheese sauce and mix until incorporated.
Plating
  1. Add mac and cheese to bowl or plate. Top with vegan buffalo chicken. Garnish with chopped green onion, if desired. Enjoy!

There is no humane way to end the life of someone There is no humane way to end the life of someone who doesn’t want to die.

If a serial killer took their victims on nice dates and vacations, showered them with gifts and praise, and then ended their lives as quickly and painlessly as possible, we wouldn’t justify the murders with, “at least the victims didn’t really suffer, and they lived happy lives.” We’d condemn the evil of taking another’s life.

So why is the reaction so different for animals? Other innocent, sentient beings who feel fear and pain. Who cry out when they’re ripped away from their families. Who are bred into an existence of exploitation and abuse, and ultimately, murder.

There are literally laws in place to punish animal abuse. No one would stand by silently if someone started harming their cat or dog. But paying for that same harm to be inflicted on pigs, cows, chickens, fish, and all other animals who aren’t as lucky as your pets is considered “normal” and part of “the circle of life”.

Please really think about the phrase “humane slaughter.” Please consider if there would be a humane way to slaughter your partner, friend, parent, child, or pet. If you wouldn’t want this done to someone you love, then you probably don’t align with supporting this being done to over 80 billion land animals and over 1 trillion marine animals each year.

Which meal would you pick?
10 years ago today I made the best decision of my 10 years ago today I made the best decision of my life.

I was in my college dorm room, sobbing my soul out after watching @realgaryyourofsky’s Best Speech You Will Ever Hear.

Awakened to truths I couldn’t unknow, unfeel, or unsee.

I didn’t know any other vegans. I endured a lot of judgment, skepticism, and doubt about my lifestyle, diet, and beliefs.

I felt very alone. But to me, there was no other option.

I felt insecure in conversations. I didn’t yet have the inner groundedness, confidence, or capacity to be on the receiving end of others’ cognitive dissonance, defensiveness, and emotional projections.

So for years, I shrunk myself. I fell into a really dark place. I believed it when people told me I wouldn’t make a difference.

But I kept learning to trust my intuition and lean into the inner nudges and decisions I knew were meant for me, no matter how scary they felt.

I’ve embraced more of my full self. I’ve never felt more empowered to advocate for myself and speak up for others.

No matter how heavy and scary the world feels, I’m so grateful to be part of a movement that brings so much hope for collective compassion and healing.

There was a version of me who genuinely believed I There was a version of me who genuinely believed I was just going to keep getting more out of shape.

Bigger, weaker, and less healthy.

I grew up skinny and was always told, “enjoy your body while you’re young… it won’t last forever.” 🙄 

So when I gained 20+ lbs in college (none of it muscle), I just accepted that everything would be downhill from there.

For years, I stayed stuck comparing myself to others.

The girls my exes cheated on me with.

People on Instagram who looked strong and confident.

Athletes who were jacked and still ate a lot of food.

I kept thinking, “why not ME?” But not in an empowering way, in a defeated way, like I was broken.

Until one day, the meaning of that question shifted.

If it’s possible for them, why wouldn’t it be possible for me too? “Why NOT me!?”

That was the moment everything started to change.

It didn’t happen instantly, and the journey was not linear. But my identity shifted before anything else.

I stopped seeing myself as “unlucky” or “not built for that” and started making decisions from the version of me who knew change was possible.

I got uncomfortable.

I showed up to the gym consistently. I tracked my workouts. I learned how to eat in a way that supported my goals. I started building a loving relationship with myself instead of being my own worst critic.

And a year later, I said something that would’ve sounded impossible before:

“I think I kind of want to try competing in bodybuilding.”

That’s when it hit me.

This journey changed so much more than my body. It completely changed how I see myself and what I believe is possible.

Most people who feel stuck believe they’re not try Most people who feel stuck believe they’re not trying hard enough.

1. Push harder, work more, and stay in situations that don’t feel right a little longer, hoping it’ll all eventually work out.
